Key Lime Cheesecake Protein Squares recipe – simply sounds great doesn’t it? For me, there’s nothing else that screams of summer quite like a Key Lime Pie. The zing of lime reminds me of long, hot days spent on the beach, mojito in one hand, book in another.

Anyway, as soon as I heard GoNutrition had a flavour of Whey Protein 80 called “Key Lime Pie,” I knew exactly what I had to do. I was going to recreate a healthy, protein-packed version of my favourite summer pud – and it was going to be spectacular.

The best thing about this Key Lime Cheesecake Protein Squares recipe (aside from the taste!) is that it’s so simple to make. The base was made with ground almonds (I used GoNutrition’s Natural Almonds and blitzed them into a flour), my new favourite Whey Protein 80, chia seeds and GoNutrition’s fabulous Organic Virgin Coconut Oil.

The topping – wow! Made with eggs, greek yoghurt, lime and Key Lime GN Whey Protein 80. I had to resist the urge to eat this straight out of the bowl (OK, disclaimer: I may have given in and eaten a bit by the spoonful…)

Key Lime Cheesecake Protein Squares recipe ingredients:

For the base:

For the cheesecake:

  • 2 eggs
  • 2 cups Greek Yoghurt
  • 2 tbsp low-fat cream cheese, at room temperature
  • ½ cup stevia
  • Zest and juice of one lime
  • 1 scoop GoNutrition Whey Protein 80 in Key Lime Pie flavour

Method

1) Preheat the oven to 150C. Pulse together the base ingredients in a food processor until they stick together. Press down into a lined brownie tin and freeze until set.

2) In the meantime, make your filling by whisking together the eggs, yoghurt and cream cheese until smooth and combined. Stir in the lime juice and zest, then slowly add in the stevia and protein powder, mixing in between each addition.

3) Pour over the set cheesecake filling, smoothing the top down. Bake in the oven for around 40 minutes, covering with baking paper half-way through if starting to brown. It’s cooked when almost set, but it still has a slight wobble.

4) Allow the cheesecake to cool, then place in the fridge to set for an hour. Cut into bars, grate some more lime zest over the top if desired, and enjoy!
